...at a loss

So I moved my desktop to a more blogging friendly location, where I can keep an eye on the kid and he can keep an eye on me, so expect to hear more from me in the future! I'm excited. I feel like I can actually be on the computer without feeling banished to the bedroom.

I'm kind of at a loss. I am trying to be creative in the things I feed my toddler while keeping them tasty and healthy. Usually, he gets some leftovers from our dinner the night before, if there are leftovers but a lot of times, there aren't or what's there isn't exactly healthy *hangs head in shame*. Anyway, I try to find options that are quick, easy and nutritious for my kiddo.

Last night, I made him a pasta mix with bowtie pasta, diced tomatoes, green beans (which don't digest if not chewed, fyi) and corn. I added some cheese and deli turkey and warmed it up for him and he thoroughly enjoyed it. I made a big ole pot and froze the rest, thinking that this will be a good meal to send with him to Mother's day out. I try to send finger foods so they're not constantly spoon feeding him.

But, where to go from here? I'd like to start making large batches of stuff that I can freeze and give him on the fly. Sandwiches are easy but he's not quite ready for them, although i do give him chopped up sandwiches and let him tear them apart. Eventually, the different elements all make it to his tummy.

We like to give him grown up food to try to avoid a picky eater...you know, like pesto sauce or other things you wouldn't expect people to feed a one year old. Someday, he'll grow up to be a famous chef with a refined palate working in some fancy resort where he pays for his parent's penthouse luxury suite...

Suggestions? Ideas?

  1. I definitely need more ideas too, but I do give Spencer hummus on a whole wheat pita. He LOVE it. I will also put hummus on the pita, add a slice of turkey, a slice of cheese, and then dice it up for his lunch. He eats the WHOLE thing. Other than that though, I got nothing new for ya.

  2. Hummus? pita? hello! Where have I been? I love those things but haven't bought them in forever! That is definitely going on my grocery list!!!!
